It’s Soup Season! 4 Favorite Recipes for Fall

It’s finally October! Or, as we like to say at LAB, we’ve officially arrived in soup season! Cooler weather brings a new crop of local produce to showcase in our daily dishes, and there’s no cozier way to pull fresh ingredients together than with a warm soup. Whether you’re spooning out servings for your loved ones or meal-prepping for a busy week ahead, a quality soup is truly comfort in a cup.
Since it’s a team-wide obsession, we decided to ask our LAB crew what they’re loving this season, and share our favorite recipes with you!
Mollie: Wild Rice Soup
Since our Loring Park Studio is just a few blocks away from the downtown Lunds & Byerlys, every year when the weather cools down I crave their Wild Rice soup. It reminds me of fall walks to pick up lunch with the team, and cozy days at the office. I even crave it when I’m at home, which is why I’m so glad they’re generous enough to share the recipe for this famous local favorite!
Kate: Chicken Tortilla Soup
This is one of my mom’s go-to soup recipes, so whenever I have this, it makes me feel like I’m cuddled up with my dogs on our family’s couch, enjoying this soup with my parents and brothers. It’s the perfect mix of hearty and light, making it easy to always come back for seconds.

Erica: Curry Lentil Soup
I loooove all soup! I am a souper fan and could live off of soup. ;) I love creamy soups with gnocchi, savory soups, all of them! Recently though, I had a curry lentil soup from a local restaurant near me and added crunchy chickpeas and chicken for a dose of extra protein. Since I love all things curry, this was a warm and cozy meal with a little kick!

Emma: Classic Tomato Bisque
No matter the season, tomato soup is always a go-to for me because of its fresh flavor and dip-ability. Bonus points for fresh basil and extra parmesan! This week, I made this soup with some fresh sourdough I picked up from my Black Walnut Bakery and it was a perfect welcome to fall.
